This delicious uncooked vegetable
soup is featured during Week 2 of my detoxification plan in both
REJUVENATE and THE BODY SMART SYSTEM. Raw soups are a potent source
for all the vitamins and minerals available in the raw vegetables
themselves. Their fiber content helps to sweep the intestines of
waste, assisting the intense cleansing that takes place during a
cleansing program.
2 cups tomatoes, chopped
2 cloves garlic, minced
4 cups onion, chopped
2 cucumbers, peeled and sliced
2 yellow squash, chopped
2 zucchini, chopped
2 cups celery, diced
4 cups red bell pepper, diced
1 ear of corn
4 teaspoons sea salt
1 tablespoon umeboshi vinegar
1 tablespoon dried dill or 2 tablespoons
fresh dill
*Cut the corn off the cob and combine it with all the other
ingredients in a blender or food processor. Puree the mixture and
pour it into a serving bowl.
*Garnish the soup with thin slices of cucumber and a sprinkle of fresh
dill.
*Serves four.
